As barbeque season approaches, thoughts turn to summery dishes that you can enjoy whilst still adhering to the principles of a paleo diet.
Paleo is grounded in the belief that modern diets, full of refined foods, sugars, and grains, contribute to chronic diseases such as obesity, diabetes, and heart disease.
The principles of the paleo diet are designed to promote eating more naturally and healthfully, focusing on foods that could have been hunted or gathered rather than cultivated or processed. As the weather warms, here are some ideas to tantalise your tastebuds:
Grilled Lemon Herb Chicken Skewers
Marinate chicken pieces in olive oil, lemon juice, minced garlic, and herbs for at least an hour. Thread the chicken onto skewers and grill until cooked through.
Watermelon and Cucumber Salad
Cube the watermelon and cucumber, finely slice the red onion, and chop the mint. Mix in a bowl with olive oil, lime juice, salt, and pepper to taste.
Courgette Noodles with Pesto
Spiralise the courgette into noodles. Blend basil, garlic, nuts, and olive oil in a food processor to make pesto. Toss the courgette noodles with the pesto and serve raw or lightly grilled.
Sticking to paleo does not need to be difficult in summer; with plenty of fresh fruits and vegetables as well as lean meats to choose from the possibilities are endless.
